I noticed the construction of a new Waffle House located just west of St. Andrew Dung-Lac Catholic church on the south side of SW 59th St. Smart thinking to build a 24hr diner in close proximity to an airport and a Catholic church.

Very good spot. That's the exit I often use when traveling to and from the airport.
I wonder what they will do with the one at 74th and S may just off 240? This is approximately a mile apart.
My 15 yr old son and I love WH and frequent the one at 74/May. It is an older store so maybe replacing. Interesting story on WH is that FEMA actually has a Waffle House index. https://en.wikipedia.org/wiki/Waffle_House_Index
For the record...I like mine smothered covered chunked and peppered.
i'm not seeing the advantage of 59th over 74th... would really like to know the rationale.
I've seen Waffle Houses on consecutive interstate exits, they may leave them both.
For example, Norman has a Waffle House on the east side of I-35 at Main St. and another one on the west side of I-35 at Robinson St.
I will say, if they're going to keep the one at I-240 and May open, I'm a bit surprised they're not building the new one a few miles south on I-44, closer to the new Wal-Mart.
I think part of building there as well is the proposed Loves truck stop that has been discussed for (basically) right across the street. If that Loves does get built, that should bring WH a good chunk of business, I'd think.
i just happened to pass by on my way to work and this is way further along than i had expected... the exterior is pretty close to being complete and is located on the southeast corner of 59th & independence. from the original description in this thread, i was thinking it would go in on the north side of 59th, directly west of the church.
Waffle House on S. May and I-240 is gone. Boarded up and sign gone.
The new location on SW 59th and I-44 was open this morning.
It's almost like they knew about the new Amazon facility. With Amazon going in, it's almost a guarantee that Loves will build a full service Truck Stop to cater to all the increased Truck traffic. 89th is more of a "c-store".
It wouldn't have been surprising to me to see them both open had that been the case. It made me think of I-10 on the north side of Biloxi, MS, where they have a Waffle House on either side of the highway at the same exit.
Was told that originally they were going to tear down and rebuild at the same location, but decided to move because of traffic issues at the I-240 & May intersection.
