I guess it's almost ready? It says at the official site that OKC Ramsay's Kitchen will open in October!
They've also posted the finished menu. It seems to be about the same as the one in Naperville, with just a few small changes I noticed. Prices are about the same, but there are a couple of changes. Beef Welly is $2 cheaper.
On the onion soup...had to look this up to see if they were just mispelling rabbit. (They aren't)

The Grand Opening for Ramsay's Kitchen by Gordon Ramsay in Chisholm Creek has been set:

Actually a better way to say it is "the 4th location so far," with a 5th location planned for Reno later this year and more planned beyond that.One of Four!
On my first visit to England, in 1978, (mainly to ride trains, with many footplate rides), I really enjoyed all the vegetarian restaurants. English cooking, then, was blah by continental standards (French, Italian), but the vegetarian places were very good, indeed. Lots and lots of dairy, but no meat. Quiche’s, and wonderful local whipped cream slathered over fruit crumbles. The English seem to have had a long vegetarian movement.
I’m looking at pictures of Beef Wellington and it usually looks awfully rare. Will places like this cook Beefy Welly at medium temps?

This article talks about the recently-opened Hell's Kitchen location at the Foxwoods Casino Resort in New England. It might be different at Ramsay's Kitchen locations (and also at Gordon Ramsay Steak locations, for that matter), but probably not:
So based on that, it sounds like the Beef Wellington literally CANNOT be cooked any other way than the one way they do it.Cut from the beef tenderloin, the beef Wellington is a filet-mignon sized portion and is cooked medium rare with brushed-on mustard, duxelle mushrooms, parma ham and puffed pastry.
“It takes out the guesswork for us,” Archer (Ashley Archer, culinary director for Foxwoods) said. “When you’re going through a thousand of them a week, it’s nice to know this is what needs to be done. That is something every restaurant struggles with, consistency. There’s no interpretation or guess work.”
Allen (Eddie Allen, vice president of food and beverage at Foxwoods) said the oven is also specifically calibrated for the beef Wellington.
“The process of the Wellington from start to finish … is pretty orchestrated to the second,” he said. “There’s not a lot of ways that somebody can make that wrong. You do these things you’re going to produce the results Gordon wants.”

Which is bad for me, as I have a medical condition which causes me gastric distress if I eat any beef less than well done. It's weird, but that's literally how I'm built. So I can't ever enjoy those.
I guess you could order it to-go and try to further cook it yourself. There is a lot of instructional videos online to make it yourself as well.
