Check with Artisan's Pride on Lindsay Street in Norman..... They are selling short ribs but not sure if they are plate or chuck.
^^good suggestion as they know their stuff... unfortunately, i had already called them and they only carry chuck. at least they knew the difference. cusack's told me that they pretty much only do steaks and crest wouldn't even let me talk to the meat dept. manager over the phone... said i'd have to come in. -M
hmmm... cossey's says they have them but i don't trust it since the lady says that the cryovac bag they're in says "chuck"... i think they'll be uncut unlike the ones i found at wheeler's, though. the lady i talked to seems to think (like wheeler's) that there are only two types of beef ribs: chuck, and back. i'm not so sure that's right as the usda also breaks out plate ribs... essentially ribs 6-10 on the underside of the carcass. really thought this would be easier! -M
Pardon my ignorance, but what's the difference? I may have an idea if I knew what you were looking for.
just different parts of the animal, so different characteristics in flavor/texture. here is a page that describes the different rib cuts. i'm looking for 123a and most places only have some variation of 130. -M

I'm not sure about these ribs, but Kamp's Meat Market is always my go to.
Don't waste your time with Crest... When I asked for beef plate short ribs at their Primal meat sale they gave me a confused look so i asked if they had back ribs and they said "We have baby backs." to which I responded... "Wrong animal."
I've also asked at Rhett's and Kamp's and neither had them.
I have seen short ribs listed on the Oklahoma Food Cooperative website but since you don't get to see what your ordering.... I haven't pulled the trigger on a slab yet.
swung by rhett's just this past weekened for some steaks (beyond excellent, as always) and was surprised that he wouldn't try to order them.
great idea on the food coop... i found a producer that has a facebook account and shot a message to them. we'll see how that works out. -M

I've never been myself, so I'm not 100% sure what all they can get, but it's a name I haven't seen thrown out yet... Wheeler's Meat Market, on SE 44th, maybe?

thanks for the suggestion... that's actually one of the first places i hit up (post #600) and they only had chuck ribs... they thought they were the same as plate.
i think that the farmers coop is going to be a bust... they were really friendly and responsive, but it looks like their processor only cuts the plate ribs into squares. i'm going to swing by the osu okc farmer's market on saturday to see the slabs he has but i suspect they'll be chuck. -M

I was at Sams club tonight, and the butcher said he has them... Gotta buy a case though...with all the comments on this thread sounds like you could go in with a few guys and get your fix....

Checked availability at the Moore location and it said they were in stock. It does appear you may have to purchase by the case but might be worth asking if they would open a case..... Price is $333 per case.
thanks for the link... dang, that's pricey. this line really makes me nervous, though: "consists of the rib section from any rib and/or plate item"
sounds to me like there's no guaranty to get meat from the plate section... and for north of $300, i'd have to get exactly what i want. -M
