    i may have to make a batch tonight in observance...

    the best method, imo, is to fry them slowly at 225 for around half an hour... sort of like confit. take the wings out then fry them in batches at 350 until the skin gets crispy.

    however, that's alot of work... what i usually do is dust the wings with spices and a touch of corn starch (to help keep the skin crispy) and throw them on the grill for about 15 minutes a side.

    i keep the sauce simple... frank's red hot, butter, a splash of vinegar, and a little honey.

    Go to Savory Spice Shop and get you some of this to put on them.

    yeah, savory is an awesome place... your link didn't come through, what spice blend do you recommend?

    i usually just put kosher salt, fresh ground black pepper, and ground guajillo.

    edit: got it to work! for some reason internet explorer wouldn't display the page but chrome did just fine. i actually saw that ghost pepper salt last time i was in but didn't get it 'cause i thought it would be too hot. i like spicy food, but i'm not into the equivalent of pepper spraying myself. : ) i'll have to give this stuff a shot sometime. -M

    Despite what the sold by date on the package says... I just bought it yesterday and haven't tried it yet to verify the heat level but the salesperson was very careful to warm me that it does have a kick.

    Your rub is pretty much how I usually do mine too.
