Doug, hook us up with some apple pudding.
Apple pudding looks great. I'll pass on the hoppin john. Black eyed peas make me puke. Probably why I always have a miserable year every year. LOL
I usually make Hoppin John for New Years, but this year I had some Boudain Sausage to use up so I went with a more Cajun version.
I'd like to hear about it ... care to share your recipe?
1lb black eyed peas, rinsed and soaked in ice water for 4-6 hours
4 Tbs of butter
4-6 cloves of garlic, minced
3 ribs of celery, sliced
1 green bell pepper, chopped
1 yellow onion, chopped
1lb Wheeler's Meat Market Budain Sausage, sliced
4 Cups of chicken stock, add water if needed to cover the peas
Cajun seasoning to taste
Melt the butter in a stockpot. Add garlic and saute for 1-2 min. Add celery, pepper and onion and saute until translucent. Add the sliced sausage and saute until heated through and spices are released. Taste at this point and decide how much, if any spices you want to add. When satisfied, add the peas and chicken stock and simmer until the peas are tender.
