Ah. Those are a few of my favorites. I'm just sad they took the tamales off the happy hour menu.

Bates, Prix Fixe went up to $39 I believe.
My wife is taking me to Red Prime for my 40th BD and was wanting recommendations on which steak. Looking at the menu I see they have a bone in ribeye which would be my first choice hands down anytime I order steak. However I have never had a true dry aged steak before.... what would be your recommendation between the bone in ribeye or the 40 day dry aged ribeye?
I would go with the bone in ribeye. Make sure you order the mashed potatoes, and every appetizer. Well, maybe not every appetizer. They're all good though. I'm a big asparagus lover and don't really like the way they prepare asparagus, but that's the only thing I've tried that I don't like.
If you want something a little less traditional, the Wagyu skirt steak ordered with the coffee rub is dynamite.

You can't order anything bad there. The asparagus is outstanding and so is the green chili mac. I also prefer the black peppercorn crust with truffle butter. Don't get a well cooked steak if you like well done. You can't appreciate a great steak if you ruin it by cooking it too long.
flash fried spinich
No worries there. I am a medium rare guy and I DON'T eat steak medium well or more. Sadly I am already planning exactly what I want to have... I love quail, so I am starting off with that and then I am looking at the brown sugar/salt crust with truffle butter. Gratin potatoes and the smoked bacon creamed corn look to be my picks on sides.... still weighing in on dry aged or not
Not sure why this fell off the radar...But I ate there again tonight. Great stuff.
Had the tamales, wife got the house salad (it was amazing)...Then there was the garlic crusted ribeye (washed down with Chimay!) and various sides and dessert. Great, GREAT dinner.
But what's up with the rolls?
My wife and I ate there a few weeks back. We ordered off the prix fixe menu. I had the french onion soup which was awesome and then the filet and green chile mac & cheese. I enjoyed it all. My wife also liked her choices, but said that the beef tenderloin tamales were "just okay". The desserts didn't really matter because we were too full to eat them, but they were also good. A nice bottle of wine completed a great evening.
I don't remember anything odd about the rolls though.
Well the rolls weren't bad. They just weren't up to the standard of everything else put on our table.
They tasted like the bag-o-rolls you grab at the last minute on the way to grandma's house. Good...But pretty flat compared to the rich flavors of the rest of the meal. Maybe it's intentional. No big deal...Maybe I'm just a big bread guy
I will say that the salted butter that comes with the rolls was pretty good. But that's the butta, not the rolls
So glad you had a great time at Red. I agree with you on the rolls/bread....we have strayed too far of course with our options. Look for buttery, yeasty, salty, herby, warm rolls very soon!
Ate at the bar several times (love the sliders!) but going for the full Red Prime experience tomorrow. Looks like the bone in ribeye is the steak of choice - any other suggestions?
Personally I'd recommend the 40 day dry-aged ribeye with the coffee crust and the Red sauce. The potato gratin, green chili mac or the creamed corn are my favorites for sides. I also really love the chop house salad.
If you are going without worrying about costs, any of the dry-aged meats will be amazing. Green chili mac or creamed corn are phenomenal. And as mentioned before, the set menu ($40) is one of (if not the best) deals you can get at any high end restaurant in OKC.
Yeah, get the dry-aged steaks, absolutely. We split the dry-aged strip, and wife had the mushroom sauce, I think I had the coffee crust one time, very pleased. Sides are served family-style, if I remember right, one big bowl or platter that you share. Green beans and asparagus weren't great, but creamed corn was fantastic.
Thanks for the recommendations. I am really looking forward to tonight's meal. I have heard nothing but great things about their steaks.
I highly recommend the set price meal ($40). The steaks are excellent and the crusting is great. I highly recommend the green chili mac and cheese.
This is a great place for a nice dinner. I would go every week if I could.
I concur with FighttheGoodFight.

Went tonight and now I am wondering why I hadn't been there many times before. Red Prime is as good as advertised. The appetizer plate was a great start - I liked the fried green tomato best but the tamale and shrimp were no slouches either. I had the dry aged rib eye with coffee crust and truffle butter - excellent hunk of cow! Cooked to perfection and the crust was unlike anything I had tried before. Next time I plan to be more minimalist with the crust and sauce to get more of a "pure" beef taste but I liked the coffee/truffle butter combination. We chose the loaded mashed potatoes and cream corn for our sides - I could eat that cream corn as a meal by itself (cream corn soup???). Finished with the cream brulee and coffee which was good, but the steak and sides were the main attraction for me. This is one of those places that makes me wish I could eat more at one sitting - I was stuffed when we left.
I will definitely be going back whenever I want a good steak. Excellent service but not pretentious - attentive but not overbearing staff. Could not have asked for a better experience.
