If you are NOT wanting a "canned" chapel experience, or even a "chapel" experience at all, I would recommend either of the following depending upon the size and scope of your ceremony.

Myriad Botanical Gardens and Crystal Bridge Tropical Conservatory
- weddings inside the Crystal Bridge (in spring and early summer not too hot)
- weddings in any of the outdoor grounds, including Meinders Garden
Civic Center Music Hall
Meinders Hall of Mirrors - 3,000 SF art deco historic ballroom with parquet wooden floors and downtown views (do both weddings and receptions) Seats up to 300
Joel Levine Hall - smaller more intimate space, wooden floors throughout. Seats up to 100 (if you want dance floor space)
All of these venues provide open (or limited open) catering.
by canned, do you mean you don't want to use one of the chapels that do this type of stuff, or not even a church either? If a church is ok, man you've got so many options. I just got married in July, and I'll tell you, there definitely is no shortage of places to have every aspect of the day.
Hands down it has to be Dominion House in Guthrie. I was there for an event at it was spectacular. Take a look at their web site below and let me know what you think, hopefully you will be surprised.

First Presbyterian OKC. Beautiful gothic designed church in the center of OKC.
One of my kids got married at Old Central up at OSU. It was really nice but not handy for people with disabilities.
You have left out some information that would be helpful in making reccommendations such as, what time of year the wedding will take place, are you looking for a church or a garden or a more offbeat type location, are you wanting to stay within a certain area, etc.?

Myrid Botanical Gardens & Crystal Bridge
Harn Homestead
The Round Barn at Arcadia
A reception at the Chesapeake Boat House

The Civic Center (my personal fave)
The Dominion House
First Presbyterian Church
I think the Water Stage at the Botanical Gardens is the best location, depending on the season.

A friend of mine went to a wedding at the zoo and just raved about it.
I can't believe no one has mentioned the Skirvin. The Venetian Room is amazing! depending on your budget it really isn't that far out of line than what a wedding chapel charges.
I'll tell you the place I would have one if I was getting married. The Masonic Temple in Guthrie. Took the tour again today and they told us that you could rent the main auditorium and the banquet hall (which is the original state house and senate chamber for $1,500.00 for weddings. If you haven't seen that auditorium...you have really missed out. It is absolutely stunning. It has to be the finest theater/auditorium this side of Chicago or New York. And it has one of only two Kimbell concert pipe organs ever made. And they allow you to use the Crystal room for your wedding photos. That room looks like something in some French or English palace.
If you have never been in the temple...you should go. They give tours Monday - Friday at 10 and 2. (No, I am not a Mason) I just have gone there for the tour 2 times, and each time I am amazed by what a real treasure that place is for the state. And I would definitely do my wedding there if I were getting married.
Untold number of lovely churches, state capitol has options as well.
I got married at Tres Suenos Vineyard in Luther. Great outdoor setting, and nice indoor space as well. And great wine. I think the price is now $995 for the rental, but includes all the tables and chairs. You can decorate as you wish, and catering is open. We loved the location. Tres Suenos Vineyards and Winery
