Does anyone have any good vegetarian/vegan recipes they would like to share?

I live in Oklahoma. I eat beef. And lots of it.

I don't have any vegetarian "recipes" per se, but I do a lot of grilled veggies alongside my steak and they would be vegetarian/vegan if eaten alone ;)
