New Market & Bakery Concept coming to the Paseo March 22nd
Oklahoma City, OK – March 17th 2022– Beginning Tuesday, March 22nd, the team that
created Holey Rollers Donuts and Red Rooster will open 30th St Market- a bakery, cafe
& deli with a curated speciality market in the Paseo (407 NW 30th St.). The concept will
also include a boutique wine shop, beers on tap and a bicycle repair shop by Celestial
Cycles.
The 30th St. concept was founded around the bakery- focusing on Executive Chef Tim
Mort’s artisan breads. European style breads, baguettes, sourdough, focaccia, and
ciabatta will be made fresh everyday. Breakfast & lunch will include sandwiches &
toasts and the bakery case will include scones, muffins, cookies and other pastries. In
addition to the made to order menu there will also be an extensive “grab ‘n’ go” menu. A
rotating selection of sandwiches, salads, grain bowls & fresh juices will be offered daily.
The menu will also include an extensive coffee program, teas from Urban Teahouse, local
beers on tap and wines by the glass.
The market aspect of 30th St. was created in a sense from the effects of Covid 19 on the
ownership group and their community. Owners Andrea & Josh Gautreaux pivoted both of
their restaurants during the first shut down and started selling many of their house made
items through Urban Agrarian and the Paseo Farmers Market. The response was
overwhelmingly positive and owners Andrea and Josh Gautreaux started plotting their
next move. ‘The market will be focused on what helped us endure the pandemic,
Gautreaux said, items like house made pickles, dips, jams, cured meats, salad dressings
and ice creams plus locally grown & made products. It will also include an extensive
boutique wine shop with a monthly wine club and a curated selection of specialty
groceries.
30th St. is located in an old empty warehouse, adjacent to Red Rooster and next to This
Land Yoga just off of the Paseo. Landlord Joy Reed Belt worked with the Gautreauxs and
the city to rezone the building to allow for a retail space. The building had been vacant
for many years. Getting it up to code and keeping its charm was the main goal for Josh,
who gc’d the project. High vaulted ceilings, old barn doors, brick walls and original
windows were restored adding much character to the space.
In addition to the main café, 30th St Market will also include a large patio with a new
covered pergola and deck. Hours of operation will begin Tuesday – Saturday 7am to 7pm
and Sunday 8am to 3pm. The bike shop will also be open the same hours and run by
business partner John Otjen and Celestial Cycles.

Can't. Wait. Went to a little sneak peak last week and it's amazing what they've done with the space compared to what it was in the beginning. Excited by the menu and planning to go here way too often as it's down the street from my house. They've been serving the focaccia at Red Rooster the last month or so and it's very very good. Highly recommend. I'm sure the rest of the food will be great and they always have great and interesting wine selections at Rooster so I'm sure it will be the same here.
