The name is Edelberto Goncalves and as far as I can tell, he was until recently the executive chef at Hubbell & Hudson (http://hubbellandhudson.com/index.html) in The Woodlands, TX.

I looked at Hubbell and Hudson web site and that type of restaurant concept would be a great fit there. I wonder if they are affiliated or if this guy is going out on his own. There are a lot of energy companies from the Houston and Woodlands area opening offices here. Possibly someone from one of them is financing him in this venture.
