Has anybody tried Ribs n More in TriCity next to the butcher's shop? Just saw it today but haven't tried it yet.

I've been a couple of times but have not blogged about them yet and they were included in the 2014 OKC Broken Rib Tour (10th out of 16).

It's pretty much just the average OKC BBQ experience.... Worth stopping if you are out that way but I wouldn't go out of my way to eat there.

Now what I can recommend in that area are the bacon burgers you can get at the Butcher's Block a few doors down. They grind bacon into their burger patties and they are great!

went a couple years ago to try it out... i agree that it's pretty average. it's not bad but doesn't really stand out from the many other choices available. -M

I will try the burgers. UI have gotten sausages from them as well as sausage meat and both were excellent.

I've never been disappointed with anything I've bought there.... Just wish I was closer to them.

Can you order sausages with certain ingredients? Some of my family members are extremely opinionated about what they like in a sausage -- can you order a "signature" sausage?

Hmmmm... What corner of May and 10th? I drive through that intersection regularly and can't imagine I would have missed a Q-raunt there.

Perhaps you meant Pappy's at Reno and May?

Before the fire I thought it was good but a little pricey.... I was there about a month after they re-opened and did not think it was as good but was still pricey..... Could have just caught them on a bad day though... Oklahoma City BBQ isn't known for consistency.... :+/

Nope, you didn't catch them on a bad day, I work down the street from them, had to try them, completely average, absolutely nothing worth getting excited about (tried brisket and pulled pork). But then again, my opinion is that pretty much any OKC BBQ joint that I've tried (still have some to get to, so I haven't been to *all* of them) is not very good (except Mr. Spriggs, but they're just slightly above average, not very much, and I don't think they've re-opened yet).

Not yet but when I drove by there last Tuesday they did have a sign up on the front of the building.

Where Apple Medical used to be on Air Depot in Midwest City..... Just right down the street from their previous location and much better than the 10th and Midwest Blvd location they were considering.

There may be some things going on inside, but last Tuesday the new Mr. Sprigg's didn't look any different than it did when I last posted, 10-23. As long as it's done when I move to MWC, I will be happy. I did notice that there's a Billy Sim's on Air Depot. I will have to try them. I wasn't thrilled with the food at the Edmond location, but it hadn't been open long, less than a month.

Don't get too excited about Billy Sim's, I've been to 3 of their locations for lunch (not my choice, I was overruled, the people I was with wanted to eat there), they were pretty much all the same, the meal you got at the Edmond one is pretty representative of them...

Nice review, I have been to most of the Q-raunts reviewed and although I have a different opinion about a few of them (as you said "I'm about telling you which BBQ tastes the best to me."), you have convinced me to try a couple that I haven't been to in quite a while. Just curious, judge #2 had "no comment" on ten of the sixteen restaurants reviewed. Why is that?

I wish I knew for sure. I did not make comments mandatory and they are probably the least experienced when it comes to BBQ. So they might just not have known what to say.

I'm glad to see Backyard do so well because I've been a little worried about them.

I love the space, the location and concept... But it seems their food generally misses the mark, especially at the prices they charge.

I wonder how they are doing in general, now that the new factor has started to wear off.

I'm sure they'll benefit from all the great things coming to Uptown.

You pretty much nail it with that comment in my opinion but I also think they will be fine and around for a long time.

After they served me rib jerky on my last lunch visit there and when the manager asked me how the food was and I held up a rib and showed it to her and she just smiled and walked off. I haven't been back there for lunch because the food is priced to high to be served anything short of what we were served the day we were there for the Tour.

While they didn't fill the niche I was hoping they would fill when I saw the places they went to for inspiration. They are a niche BBQ restaurant with their specials not being items you generally find in Q-raunts.... Then again that's kind of what all their restaurants concepts are. They take a basic idea and they attempt to kick it up.

So while I think they succeed at what they do. The often times fail miserably at the basics. Which frustrates me because despite the mythical proportions BBQ has attained in this country recently. At it's roots it is a basic cuisine.... Meat... Seasonings... Smoke..... The true masters are the ones that take those 3 simple concepts and turn out one of the best pieces of meat you will ever put in your mouth. So to me Back Door is kind of like the Wizard of Oz.... They aren't that great at the basics but they are wizards when it comes to using smoke and mirrors to create their specials.

I think it's the difference between chef-driven BBQ and that of a pit master. I see them both as different animals. If you can get past the expectations you'd associate with a traditional, low-rent (I mean "low rent" in a good way) place, you can be really pleasantly surprised in a chef-driven place. Especially when it comes to sliced meats and sides. Just don't get the ribs.

Had lunch there yesterday. The sliced brisket was very good and the sides, as always, were fantastic.

Agree that the sides are the best part of the meal there! Haven't been in a while but i need to fill up so I can sleep through Camelot at CC which i hear is not very good:rolleyes:

Oddly enough I recently had someone ask me if I knew of any good Q in the Seattle area.... Unfortunately, despite being a Seahawk fan most of my life, I have never made it to visit that city. I usually begin my research of an area on Urbanspoon. You have to filter out a lot of the reviews but usually you can find one or two reviewers in an area with at least double digit numers of reviews that can be counted on to be fairly accurate.

Also good BBQ is rather subjective.... I know a lot of people that rave about some OKC Q-raunts and I'm sitting there shaking my head and wondering if we were served the same Q...... I'm personally partial to Central Texas style BBQ but as a blogger and a KCBS Certified Judge. I try to base my opinion of each Q-raunt I eat at based on it's own merits and not comparing it to other places I have been.

For example.... I'm not a big fan of sauced meat but when I am served sauced meat I still judge it based on it's appearance, taste, and texture.... Not how it compares to the incredible BBQ I've had in a few places in Texas.

A couple of weeks ago, I was introduced to this place: History ? Jack's BBQ (http://www.jacksbbq.com/history/)

I had a delcious meal, an interesting conversation with the proprietor, Jack, and a tour of the smoking area. If you are looking for central Texas BBQ in the Seattle area, look no further than Jack's.

Great read. Very interesting the different viewpoints between judges and their individual preferences. Also interesting to see the consistency of some of the q-joints year to year compared to some of the others whose quality may vary day to day. Great job.

We still go to Bad Brads in Yukon, also Swadleys in Bethany.....best I've found so far. We plan on trying some of the other places around the metro.

What I find the most interesting is that two of the Top 5 have also served me some really, and I mean really, bad ribs.

In fact Bedlam BBQ wasn't even on the list in 2014, because of the ribs they had served me in June of 2013, and only made it as a replacement for Mr. Sprigg's. Now they've made the Top 5 both years and only missed being 1st in 2014 by 0.4444 points.

Inconsistency is a huge problem with Oklahoma City BBQ in my opinion. So I was kind of surprised to see 3 of the Top 5 from last year still in the Top 5..... I think the 2016 Tour will really start to show if there is a trend because I should have the same 3 volunteers and the same scoring system in place.

I have been to Bad Brad's twice and left disappointed both times... May have just been due to bad timing.

I've always found Swadley's to be hit and miss... Had some really good meals there and some that left me never wanting to go back.

But I've found Oklahoma City BBQ to be inconsistent in general. I blame it on the quantity over quality business model that the Oklahoma City Q-raunts use.

HAHA... Yep and they get a t-shirt!

I really did end up with a good group and they helped me offset some of the cost by volunteering to pay for 1 slab of ribs each weekend of the tour. So I only had to cover the cost of 4 slabs of ribs, the shirts, and gas. We had a lot of fun over the 4 days.

Thanks..... I chose the pork rib because I think it's one meat where Oklahoma equals, or excels at, compared to other parts of the country.

We fail miserably at brisket and pulled pork isn't on the menu at enough places to work. That and pulled pork in Oklahoma is too often chopped, folded, spindled, & mutilated here to even qualify as pulled pork.

The volunteers for this years tour inquired about doing the same for brisket but I don't think I could bring myself to eat 16 samples of Okie Brisket...... Compared to brisket I have eaten in Texas. Our version is just awful. Too often it's dry and flavorless or stringy and tastes like roast beef.

As far as a meat specialty goes. I'm not sure how we would judge that because it would have to be comparative. When we judge the ribs we judge each slab on it's own merits. We don't ask ourself "Is the flavor/aroma/texture of this rib better than the flavor/aroma/texture of the rib I ate the prior weekend?" we ask ourselves "Does the flavor/aroma/texture of this rib make me want to eat it again?". Then we score up or down from the 6 average based on our answer.

And I also don't like to claim my list to be a "Best of" list. Yes, I think it's a fairly comprehensive study of the rib landscape in Oklahoma City but at the same time it's 4 subjective tastes on what we all like in a rib..... I don't want to define what a good rib is supposed to taste/smell/feel like. I just want to find the Q-raunt that serves the style of ribs that I enjoy the most and in turn that the reader that likes their ribs to be similar to my tastes can find as well.

I don't consider the Q-raunts that came in at the bottom of the list to be horrible ribs. One of those at the bottom has been in business for quite some time. So obviously someone enjoys the way they make their ribs. I'm just not one of those people.

Leaving Steve's off was a tough decision... The location that was our #1 rib last year has been closed and is now Cal's Chicago Style Eatery.... I consider the Steve's in Edmond to be more of a sports bar so I left it off this year.... Next year I would like to include an Edmond/Arcadia loop. So I might add them back to the list of 16 or we might expand to 20..... Getting the 5th weekend in might be tough though due to my KCBS judging starting up in March.

Yeah.... Unfortunately it seems for those of us that like moist, flavorful, brisket. We have two options... Learn to make it ourselves or make the drive to Central Texas where they have turned brisket into an art form...... Fortunately I have learned how to emulate the brisket I've had in Texas. So I just have to allot myself the time it takes me to make it.

I had hopes that Back Door BBQ would be our brisket salvation but so far theirs has been more like roast beef.

I am a pretty good cook but have never Tackled Brisket and I always fill up on it in Texas for sure.

I'm not going to name names but I was talking with a pitmaster about cooking Central Texas Style one day and his response was "I'm afraid to advertise Texas Style brisket in Oklahoma.".

We have quite a few Texas based restaurants here...... If I ever get to try my Saturday only pop-up type thing. I will be serving Texas Style brisket and I think once people get a taste of it they will be hooked.... But that's a pretty big IF with the hours I work at my current profession.

I have not made it to KC yet but I would have to say probably not. If there was some place comparable in OKC it would be making all of the popular "Best of" lists that sites like Eater like to put out.

Speaking of out of town joints. Have you ever tried Pappy's in St. Louis? I know that there's a Pappy's here in the city over on S.May but don't think it's the same Pappy's people. But the Pappy's in St. Louis I hear is some of the best regardless of City. I haven't been there myself but if I make it up there it is the spot to go from what I hear.

Sorry to see Steve's on Hefner go.

Steve started out in that center in a booth in the entry at Homeland before opening up his store in the center. I had no idea it had turned into something else, I haven't been there since before I moved to Austin 12 years ago.

...at least Lone Star is Texas based (Plano) unlike Texas Roadhouse which is based out of Indianapolis. In Austin we usually went to Texas Land & Cattle (owned by the same group as Lone Star) or Saltgrass (Landry's owned). Saltgrass up here has Texas stuff all over the place and doesn't seem to bother the locals who have a history of disdain towards Texans and Californians. We have plenty of restaurants from from both states along with a bunch of Colorado grown chains.

I know Wellston isn't really OKC Metro but if any of you happen to be headed to Tulsa or on Route 66. You have to stop and try The Butcher BBQ Stand.

I was invited to attend the private soft opening last night and the Bouskas are making some really good Q from their bright red storage container BBQ shack.

Levi Bouska is doing most of the cooking but if any of you watch BBQ Pitmasters his dad David took 3rd place a couple of seasons ago and I think is competing in this seasons BBQ Pitmasters All-Stars.

Their sausages are made to order for them and were excellent quality. They offer chicken that they call Chick-Q Nuggets. It's not your typical BBQ chicken and I normally don't even bother with chicken at a Q-raunt but this stuff was really good...... Heck I even liked the brisket and I'm notoriously harsh on Okie Brisket.
