Pretty awesome for the Good Egg people to basically create a whole new category of restaurant in upscale BBQ.

Create it HERE, maybe, but they're hardly the first to come up with the concept. Lambert's in Austin, Jack Stack in Kansas City, Pig and Pearl in Atlanta, Edley's in Nashville. All promote themselves as "upscale" in one way or another, to varying degrees. Every so often someone comes up with the idea "Hey, why don't we have a BBQ place with fancy plates and white tablecloths and cloth napkins and real silverware!". The white tablecloths generally don't really stick around that long for obvious reasons. As much as a BBQ brunch piques my interest, I'm of the "the soot on the walls is what's holding this place up" camp.

We have been eating at Rays Smokehouse BBQ in Norman a lot lately. We have never had a bad meal there. The owner is a former OU football player. Love that place.

Ray’s is great. Glad they have hung on with the Lindsey reconstruction.

so... a few months ago i struggled to find some decent sausages to bring to a family reunion and so that motivated me to learn some new tricks. it's taken a bit of trial and error but i think i've put out some pretty decent sausage... this is some andouille that i smoked last night. i started with a pork shoulder and ground that together with some additional pork fat. i then added spices and curing salt, stuffed the casings and let the flavors meld for a couple days before throwing it on the smoker.

I'll give you a heads up on how to get your hands on some cheap pork shoulder if you don't mind driving to Shawnee.

March 24th and 25th is the Fire Lake BBQ cookoff and the Fire Lake grocery store always has a big sale that weekend. Last two years I have gotten shoulders for $0.89 a lb. I bought 6 last year and I've never seen a sign posting a limit on them.

thanks! you're not kidding... it takes a few pieces of specialized equipment. a co-worker gave me the grinder... in exchange for some of what i make with it, of course. i'm using what amounts to a caulk gun to do the stuffing. it all takes up a bit of space.

that's a really good price, i might have to run over there... i want to say that i gave around $1.39 a pound at chef's store.

CREST carries it in gallon jugs, but I have not seen it locally in the 18 oz. size. BTW, that is some good looking sausage you made. So where do you live?

This weekend is the Firelake BBQ Cookoff in Shawnee and the Firelake Grocery Store always has a big sale for the event.

Last year they had pork shoulders for $0.89 a lb.

finally found some belly ribs... but unfortunately didn't know that the butcher had left them in until after I had cured and smoked the bellies for bacon. argh! guess i'm going to have to make "bone-in" bacon a thing.

i got these from saigon taipei market on 89th & penn... i've bought bellies from them 3-4 times before and this is the first time that the rib bones were included, so i'm thinking that it was just a fluke.

I can't remember if I have ever bought them there or not... Last couple of times I went to Super Cao Nguyen..... I need to start making my own bacon again.... Started Keto and I've been living on bacon.... Making my own I know exactly what's going in it.

Definitely outside the metro but I finally made it out to Butcher BBQ Stand in Wellston this morning. That place is pretty legit. Got there at 10:30am and the line was just starting to come out the building. Thankful we made it when we did, by the time they opened the line at 11 the line was outside and wrapped around the building.

We ordered the meat locker which is a little of everything. I wasn't disappointed in anything except maybe the turkey was a little eh. The brisket was fantastic, nice and tender and juicy. I'm not normally a rib guy but wow these were great as well. Also pleasantly surprised by the pulled pork which can be very hit or miss at BBQ places but theirs was spot on. Didn't care much for the sides except for the smoked corn on the cob which had a very unique flavor that we all loved. I thought the beans were fine but since they are advertised as apple pie beans they were pretty sweet.

Can't wait to get back out there.

Technically in the Metro! And really, only 35-40 minutes from Downtown. Though, I would recommend taking OK-66 as opposed to I-44 for at least one leg of the trip, as that is a gorgeous road especially during the summer months.

Butcher I think is the best in the state but not far off is jo-bawbs. Every time I go I'm amazed there isn't a line.

IMHO Burn Co in Tulsa would be my pick for best in the state. I wasn't real impressed with Butcher

I've not been to the original location of burn co, it was their new location and I wasn't very impressed. But I went early on in the opening process and maybe they hadn't nailed it down. Then the pandemic hit and I haven't been to Tulsa in over a year. I thought the pulled pork was the best I've maybe ever had at butcher and the ribs were amazing. It's also been a while since I've made it up to Butcher BBQ stand. But if you are in OKC give Jo-Bawb's a try. They have burnt ends which you don't always see in Oklahoma.

I will try them as been looking for good burnt ends in OKC. We have had burnt ends from Oklahoma Joes in Tulsa and they were really good.

EdgeCraft has been treating me right. The beef ribs were great the other weekend. The Brisket Charro beans on special were fantastic. The Hatch chili sausage was fantastic. I think I have converted about 20 people to visiting them. Never a bad experience. Except for my wallet of course.

With EdgeCraft representing Central Texas style and Clark Crew representing KC style in OKC.... If we could just get a great Carolina style place started up here I'd never have to leave OKC for BBQ again...... The scene has come a long way since my blogging days when I could find very little to get excited about in OKC.... We had good BBQ then but we didn't have anything like we have available to us now and there are a handful of others in the OKC area now that are putting out some great product and not just the cookie cutter stuff we're used to.

I would have to say that if I put together another OKC Broken Rib Tour like we did when I was blogging.... It would probably be a lot tighter race at the top than it ever was back then.

Last option I'm aware of that we had around here was Moe's Smokehouse up at about 80th and Western.... Most of his meats were underwhelming but the Eastern Carolina style pulled pork was AMAZING and they were serving pretty decent fried chicken too.

Unfortunately shortly after I found them. He got a job offer he couldn't refuse in Connecticut and moved away.

Didn't see a thread and didn't think it needed its own. Burn Co in Tulsa was destroyed by fire last night. My personal favorite and IMHO, the best bbq in the state. This was the original location downtown. They have a location in Jenks also.

Wow.... Wonder if the building was a total loss... Article just says the roof collapsed but I don't know enough about structural engineering to know if that can be fixed without taking down the rest of the structure.

I have't been to BurnCo in several years but I agree at one time they were hands down the best in the state, the BBQ game has definitely stepped up in the last few years so they have some challengers, and the only BBQ joint, at the time, that you had to stand in line to get in. And at their original location in the strip mall if you got there after noon they were probably already sold out.

I used to work a lot with a company that only did fire, water and other insurance rebuilds. Whether the walls can stay depends. If it's an all steel structure an engineer would have to determine if the wall steel got hot enough to weaken it. If it's concrete block then the walls can almost certainly stay.

The brisket was very good, but I was really disappointed in the burnt ends. I paid about $30 for them and it was heavily just chunks of fat. I like fat juicy bbq, but not big chunks. For others that go to CC, is this normal, or did I get a bad batch? For $75 for two meats, okra and Brussels sprouts, I expect premium meat.

I love CCs burnt ends. I've never had them be overly fatty.

I went to CC for the first time last week, and was very underwhelmed. We went for lunch on a workday, so I opted for the burnt end sandwich with baked beans vs. a platter. The burnt ends were very dry with no sauce (was fine with no sauce), and the portion size was extremely small for the price (sandwich was ~$20). I'm a huge fan of Edge Craft, so was expecting to pay a premium, but was overall underwhelmed. I'll go back for dinner when I can try a platter, but with how infrequently I eat BBQ it may be awhile before I make it back.

Had CC this weekend and it was ok.

pork ribs where good but not great, okra was really good but you don't much for sides and the mac n cheese was soupy.

Earls, Backdoor, and Iron Star are all way better IMO

Earls has gone the cheaper route in the post-pandemic supply chain ordeal in order to keep the prices as low as possible. You can taste the difference. I've been pretty disappointed with them lately. I've found Steve's Rib in Edmond to have kept their quality meats and their prices reflect it as well.

I've found Steve's Rib in Edmond to have kept their quality meats and their prices reflect it as well.In my wife and my opinion Earls went cheap or just changed the recipe or something a few years before COVID. It used to be our favorite Saturday no stop but they changed the seasonings on the ribs & brisket and we haven't been back.

Yes. Earl's is a local chain. At least central Oklahoma and I don't know if it's beyond that.

It's a mini-chain with 6 local locations. We grew up eating at the Earl's on Western, and we still go occasionally. Their BBQ isn't anything to write home about, but I love their hot BBQ sauce, 3rd degree buffalo wings, smokestack sandwich and burger. For the price, it's a pretty good option... especially if you go in with the understanding that it's not going to win any BBQ competitions.

Best bbq I have ever had is 2M smokehouse in San Antonio and County Line in Austin but I really want to try La BBQ, Franklins and valentines bbq in Austin but the lines are so long.

The brisket (which used to be the best I've ever had) was bland and had no smoky flavor at all. The ribs were slathered in a sweet BBQ sauce that overwhelmed the meat. The turkey was moist and overall good (though not as good as Edge Craft). The sausage was good, but the cheese jalapeño sausage was just so so. I am going to have to hear a great review from someone I trust to make the 45 minute drive and stand in line for another 50 minutes to even consider going back.

my recent experience was very similar. used to go a few times a year, and this is the fist time i have gone since covid. i feel like they have upped the price while lowering the quality of cut they are using. and the worst part with my group when we went, is that the food seemed to be just barely above room temperate when it was served to us. I don't know what they are storing the meat in before they cut it each time, but it certainly wasn't hot food. i'm not sure if i will be going back when we have places in OKC (edgecraft and clark crew) that i think are a far superior product now by comparison. and maybe that is what it really is. maybe it hasn't changed that much, but my expectations of good bbq in oklahoma have changed?

Looks good, especially the smoked tacos. We will have to try it. If you recall, do they have an actual lunch menu? They mention often on their FB page to check out lunch combos but never tell you what they actually are.

I’d be interested in hearing folks’ opinions on Bibb’s BBQ in Bricktown, which took over the old Mantel space on the corner of Sheridan and Mickey Mantle (Walnut) at the bottom of the Walnut Street Bridge. Here’s their website (https://bibbsbbq.com/)

I’ve been a few times, and have had generally a really good experience. This is a food truck to brick and mortar transition.

I don't know about a food truck, but they used to be on E Alameda out by Lake Thunderbird. I went one time and thought it was OK, but too far to return. I'll give them another try since they are closer, but I have to admit I've been spoiled with Edge Craft. Hard to match their quality.

I went to Bibb's a few weeks ago with my family. I don't eat meat so my review of the BBQ is hearsay but everyone really enjoyed their meals. I had the Mac and Cheese, fried okra, onion rings and cole slaw and enjoyed all 4 very much. They had a lot of sides for me to choose from so I have not problem eating there as a vegetarian for what it's worth. The decor does not appear to have changed at all from the Mantel so it is a more upscale experience than most BBQ restaurants. I actually appreciated that aspect and explains how they got open so fast after the announcement.
