Tundra 06-29-2016, 05:55 PM does anybody know of a meat market that sells beef plate ribs? i think the usda calls it 123a. colloquially, people refer to them as "dino" ribs... i've been wanting to find some to smoke but haven't had any luck around town. i thought i found some at wheeler's meat market but what they had was actually chuck ribs and they didn't know there was a difference. any ideas? -M
I got some from Cosseys meat market , last summer.

Check with Artisan's Pride on Lindsay Street in Norman..... They are selling short ribs but not sure if they are plate or chuck.

They will cut anything you want....

Martin 06-30-2016, 06:03 AM just different parts of the animal, so different characteristics in flavor/texture. here is a page that describes the different rib cuts. i'm looking for 123a and most places only have some variation of 130. -M

I've also asked at Rhett's and Kamp's and neither had them.
I have seen short ribs listed on the Oklahoma Food Cooperative website but since you don't get to see what your ordering.... I haven't pulled the trigger on a slab yet.

swung by rhett's just this past weekened for some steaks (beyond excellent, as always) and was surprised that he wouldn't try to order them.
great idea on the food coop... i found a producer that has a facebook account and shot a message to them. we'll see how that works out. -M

Whole Foods also has short ribs, but again may ding you on the price.

thanks for the suggestion... that's actually one of the first places i hit up (post #600) and they only had chuck ribs... they thought they were the same as plate.
i think that the farmers coop is going to be a bust... they were really friendly and responsive, but it looks like their processor only cuts the plate ribs into squares. i'm going to swing by the osu okc farmer's market on saturday to see the slabs he has but i suspect they'll be chuck. -M

Checked availability at the Moore location and it said they were in stock. It does appear you may have to purchase by the case but might be worth asking if they would open a case..... Price is $333 per case.

They no longer carry them unfortunately.... Said they were having to throw away too much due to lack of sales.

The picture looks correct.... I would ask them to open the case to inspect the slabs anyway.
Buffalo Bill 07-01-2016, 08:50 PM SAMs at 39th and May has them. Bought 6 ribs, 14 pounds, about $60. You have to ask the guy in the back. They come in a cryovac bag, 2 slabs.

I will second your opinion of Butcher BBQ Stand. I ate there today and it was the best brisket I've ever had. For ribs I have to go with Smokin' Joe's though.
MadMonk 07-25-2016, 12:27 AM Hosted a get-together this weekend with some BBQ from Bad Brad's in Yukon. We had brisket, pulled pork, and a meat tray with turkey, sausage, bologna and ham. I really enjoyed it all. I still have some leftover brisket and pork so brisket street tacos are on the menu soon and I'm going to try some bbq spaghetti too.

Oh and get there early because they do sell out of meat regularly.

I'm glad you guys enjoyed it... My personal experiences with Bad Brad's have both been...well.... Bad.
But the great thing about BBQ is there's enough different options out there we can all find what we like best.

My experience with them has been limited to stuff like bulk meat and party trays like I posted about (my favorite are the burnt ends). I've never had any ribs or even sat down to eat dinner at the restaurant, but I've been pretty happy with what I've had. The food was a pretty big hit with my guests too (but there was plenty of drinking going on too, so...) :)

The bulk meat might be the better option there.... I know I've experienced a phenomenon over the last 3 years of doing the OKC Rib Tour where places I have been served some pretty bad ribs tend to get chosen really high when we go in and order them by the slab as we do for the tour.
Bedlam almost didn't even make it on the first tour we did because of some rib jerky they had served me a couple of months prior to doing it. They only made it on the list because Mr Sprigg's had closed.... They won last year and have been Top 5 all 3 years.... Yet both times I have been there for lunch and ordered ribs as part of a meal.... I did not enjoy them at all.
Back Door BBQ is the same way... The were our consensus favorite the second year we did the tour but they have served me some awful ribs when ordered as part of a meal.

I like their sausages a lot too.... They are custom made for them by a local meat processor. So they aren't your typical food service type sausage served at the majority of Q-raunts around here. They have a little different flavor and texture.

I usually go for brisket and ribs, so I wasn't sure that I wanted everything that came with the Meat Locker. Some leftover BBQ isn't a bad idea though!

Artisan's Pride on Lindsay in Norman carries it and I've bought it at Super Cao Nguyen near 23rd and Classen.
The belly at Super Cao Nguyen comes skin on. They may remove it if you ask them too or you can cut it off yourself and make chicharrones with it.

I don't think I ever checked there but knowing that pork belly gets used a lot in Asian cuisine... It's probably a pretty safe bet they may have it.
You could also ask at some of the mercados in the area too.... I've never seen it out for sale but that's what they make the chicharron de lonja out of... So they may have some in the back that they haven't sliced up yet.

They are headed to Rendezvous. I'm curious to hear how they like Memphis BBQ vs. Texas BBQ (and anything they're used to here), as the dry rub style is much different.

I agree, I could have worded that better. They are relatively picky eaters and I'm hoping they don't try and compare that to the BBQ they're used to.

Stay AWAY from Rendezvous. Especially a discriminating 'cue consumer like yourself. TERRIBLE. And it is an extreme tourist trap, a la Spaghetti Warehouse if there were only one and if everyone told tourists that it was the best Italian food in the world, while laughing up their sleeves. If it were a fishing charter it would be known as a head boat. It is the place everyone in Memphis tells the tourists to go to, because it is the place where tourists are SUPPOSED to go. As far as recommendations go, it is similar to how everyone in OKC tells people to go to Cattleman's, even though they know Cattleman's is by far not the best steak. Except that the (right) steaks at Cattlemen's are still pretty decent, while Rendezvous is grade D crapola.
In Memphis I would personally recommend Central BBQ or Corky's, though I have also heard good things about Cozy Corner and Interstate (Neely's).
Just to be clear: Rendezvous is straight garbage.
