icecold 01-22-2010, 05:22 PM The gastropub focuses on American craft beers, offering 100 brews on tap, 200-plus beers by the bottle, and a chef-driven menu.
Tuck, Are you going to have any Bell's Brewery beers? I am a big fan of the Oberon Ale.
Fastfwd 01-25-2010, 12:17 PM Yeah, bring in some Dogfish Head while you’re at it. LOL If they’ve got the power to bring in beers I bet we could make a list! Bells is a good place to start though….. add Expedition Stout and Kalamazoo Stout!
I drink more than my share of craft beer. It’s one of my few luxuries in life. I recently found out that McNellies has been serving 14oz ‘pints’ in ‘cheater glasses’ and I’m not really happy to hear of it. I read an e-mail response from the owner to a fellow Beeradvocate.com member stating that there were taxes involved in Oklahoma that cut profits bla, bla, bla…… I don’t know man. If I’m paying out five to six bucks for a pint – I’d like to get a ‘honest pint.’ They aren’t the only ones doing it to be fair. It’s a trend that more and more establishments are picking up. The glasses look just like regular pint glasses, but the glass at the bottom is thicker.
A Pint-Size Problem - WSJ.com (http://s.wsj.net/article/SB121279252381153273.html?mod=fpa_editors_picks)
Beyond that gripe I welcome a new beer bar to the City! Fingers crossed they will serve ‘honest pints!’
OKCMallen 01-25-2010, 12:42 PM I'm pretty sure Iguana Grill has those cheater glasses, too. I love going there, go a few times a month, but never order draft beer because of it.
Fastfwd 01-25-2010, 12:57 PM I’m not saying I wouldn’t still go to McNellies, but I might request a full 16oz glass next time. Their website does say to come in to share a ‘pint’ even though the beer menu is vague with only imperial pints and the much smaller servings being specifically noted.
I appreciate McNellies being open, but I’m disappointed to learn they have been serving me in ‘cheater glasses’ all along.
LakeEffect 01-25-2010, 09:26 PM Tuck, Are you going to have any Bell's Brewery beers? I am a big fan of the Oberon Ale.
You from Michigan? I had an Oberon last weekend when I was up visiting family. Mmmm...
It would be great to have some Michigan brews here. Please!!!
kevinpate 01-25-2010, 09:37 PM Cheater glasses for beer. Sounds like they're doing ya a favor almost. After all, even better quality beer is still, well, beer.

all beer is not equal. nor wine. nor coffee.

No, not from Michigan. Me and the Oberon became friends during a 5 hour flight delay at the Detroit airport.

jbkrems 03-18-2010, 09:34 PM Looks great! I am excited about the food menu... although I am sure there will be lots of questions when I arrive for the first time, likely in April.
EvokeCoffee 03-26-2010, 08:24 PM Had the opportunity to eat there today - awesome! I'm looking forward to eating there often!
Jared6 03-27-2010, 12:40 PM Vermont white cheese and ale soup is calling my name.
metro 03-27-2010, 03:14 PM Same here. I was fortunate enough to get on a test run for lunch on Friday. All I can say is that it exceeded my expectations. I knew GEG would do a pre-opening much better than most. If not the, one of the nicest, semi-casual restaurant in OKC. The finishes were outstanding, almost Vegas caliber.
We split a couple appetizers as well as our entrees within my group, the truffle potato skins are amazing! We also had the scotch egg. I had the RePUBlic burger with a side of fondue mac and beer bratwurst and they were awesome! My wife had the fish and chips, which I must say are the best I've ever had anywhere! I've been dying to find a good fish and chips, I was hoping McNellies would have solved that, but they didn't.
The other two in my party got the filet and the pulled chicken sandwich. The filet was great and the pulled chicken sandwich was as well (however not my fav since pulled chicken really isn't my thing).
We finished it off by splitting an order of MiMi's donuts that come with 3 dipping sauces. They were amazing. This is definitely a gastro-pub with man food.
Restrooms even have flat panel tv's mounted in the wall above the urinals. Sports everywhere!
The only bad thing I have to say is that my heart isn't going to thank me for all the rich food.
RedDirt717 03-27-2010, 03:21 PM Everyone that's eaten there has crapped their pants on my twitter.
I'm planning on going tonight, unless it's wait listed...which it probably will be.
OKCMallen 03-29-2010, 10:43 AM The menu is one that looks like you could start at the top and just go down the list ordering!

positano 03-31-2010, 09:31 PM My first complaint (maybe not "complaint", but not necessarily a positive)...
The website has a tab for reservations and provides for online reservations through Open Table as well as the contact number. Open Table will allow you to make a reservation for some dates and times, but when I called and spoke to the mumbling, less-than-helpful guy who answered the phone he unapologetically says they don't take reservations.
Millie 03-31-2010, 09:33 PM I made a Republic reservation on Open Table tonight. Are you saying they said they won't honor it?
positano 03-31-2010, 09:45 PM I made a Republic reservation on Open Table tonight. Are you saying they said they won't honor it?
Not sure, Millie. I just double-checked Open Table, and see that they do show reservations available for Republic on some nights and times, but I am absolutely certain that when I called the guy on the phone said they don't take reservations. I didn't even specify a date or time, so it wasn't a matter of him telling me they didn't have availability for a specific request. It was an unequivocal response to a question of whether they accepted reservations.
Might be worth a call to them to find out whether they will honor it. Let us know how it works out.
**And to the extent my prior post says Open Table wouldn't allow me to make a reservation, I stand corrected. It does appear that you can make a res for some dates and times. Sorry for the misstatement - I went back and corrected my post.
liirogue 03-31-2010, 10:30 PM A question for those that have eaten there - what sides come with the meals? A coworker and I were looking over the menu, but didn't see where sides were really mentioned. Do the burgers come with fries, or do you have to buy them separately?
jbkrems 04-01-2010, 12:42 AM Fries are an extra $3.00 with your burger. I had dinner there on Tuesday night. I ordered the scotch egg, which was good but a bit dry; the "three pigs" platter, which was good, except my pork belly was cold (could have sat out too long), with skillet potatoes (which were too bland), and a pub pretzel with beer cheese fondue (for a third course instead of dessert). Overall it was a good meal and experience, they were jammed... would definitely return and try some other items, as everything that I saw come out of the kitchen looked good.
metro 04-01-2010, 08:53 AM Most new restaurants when opening won't allow you to make reservations for the first few weeks. I'm pretty sure after a couple week's they'll allow you to do so with OpenTable. Knowing that this concept is probably going to be packed every night with walk-ins, there is no need for additional reservations.

Yes, the sides are extra, and awesome! Just like Red Prime, most items are ala carte. The fish and chips did come with the fries though, but the burgers you order a side seperate.

The issue is that they are accepting reservations via OpenTable now, but (according to positano) are telling people who call on the phone that they do not take reservations. I made a reservation there the other day for Saturday evening because it seemed like a great place to drink good beer, eat a nice meal, and watch basketball. My confirmation email from OpenTable reads, "Your OpenTable reservation is confirmed at Republic Gastropub." and includes a confirmation number, so I would be quite displeased to get there and find out that I didn't have a table.
Dustin 04-01-2010, 01:20 PM Do you have to be 21 to get in period or just for the bar area?

Sorry if my point was unclear. I was just commenting on the fact that the website provides for a means to make reservations, which in application is inconsistent (at least according to the person who answered the phone). That point notwithstanding, I've made many reservations at new restaurants in the first few weeks. If the folks that made reservations through Open Table have their reservations honored, then I don't understand your point, as that it would appear that they are taking reservations.
All beside the point - I'm still headed that way, with or without a res...
Thanks for all of the comments on Republic. We have had a few problems with Open Table. To clear it all up: We are no longer taking reservations until further notice; however, if you did make one online or by phone, it WILL be honored.
I hope to see you there soon.

Absolutely.
OKCMallen 04-02-2010, 09:30 AM I was hoping hit it up tonight or this weekend...but seeing as it was pretty packed at 615PM yesterday, I don't know when I'll be able to get in! Maybe lunch Saturday...
JohnDenver 04-02-2010, 09:49 AM We went lastnight ~7:30. There were only 4 people in line and they said it would be a 1.5 hour wait... so I turned to talk to my wife about it. She had already turned and walked outside. "Huh? What is up?" - "It smells like the cadaver lab my freshman year in medical school. I had to leave." She had a point, it didn't smell clinical in there. Food did look good coming out though. We will give it time to air out and slow down before we go back.
metro 04-02-2010, 01:31 PM Congrats! I think that is the oddest food review ever.
soonerfangirl 04-03-2010, 06:47 PM Had lunch at Republic today after dinner at Sean Cummings last night. Culture shock! LOL! They were both so great though. Didn't notice any strange smell at Republic. Got there about 2 and they were 2/3 full. Had a Coop Zeppelin and the fish and chips - excellent! Will definitely be back often - too much I want to try.

fromdust 04-04-2010, 05:50 PM i think it will be great to watch some okc playoff games here. very cool place.
didnt stay, tho. the wait was over 2 hrs last night.
OKCMallen 04-05-2010, 09:59 AM We jumped in at an odd time on Saturday, around 445 or so. Needed a table for two and were told an hour and a half wait. We managed to find a place at the bar. Had a COOP Gran Sport Porter, scotch egg, and the lollypop buffalo wings. All were great...the egg was a little weird to me, but I don't really like eggs in any form other than scrambled. The atmosphere was compeltely awesome. I'll be back ASAP to eat a full meal!
Fastfwd 04-05-2010, 10:26 AM I went five nights last week – lol. I’m a self proclaimed beer nerd and enjoyed seeing such a high end beer bar open here. I like to hit nice beer bars when I get the chance to travel and Republic is top notch.
I know a lot of the ‘beer nerds’ are big on proper glassware. For me personally – give me a full 16oz pint glass and I’m happy for most of the beers that I enjoy. Kudos for serving honest pints!
I was actually served a Young’s Double Chocolate Stout in a tulip glass – which I disputed as being the proper glassware and was told that I would have to take it up with Jason – who is in charge of the beverages I assume. I can’t begin to imagine why a stout would be served in a tulip. At McNellies for instance – that beer for the same $6 is served in a 20oz Imperial Pint glass. I was also served the Avery Maharaja in both the 16oz pint glass and a tulip over the course of the week. Obviously, I prefer the pint glass – though I can see how it might be acceptable in a tulip – I prefer the full 16oz serving myself. If I’m going to be given the choice I will request the pint in the future.
Overall though – considering how crazy busy it was….. it was reasonably smooth sailing. I likely won’t be there nearly so often, but I will certainly be in from time to time to see how it’s going and hopefully find something interesting on the beer menu to enjoy.

I wouldn't say that was an "odd time" - you showed up 15 minutes before the start of the Michigan State vs. Butler Final Four game. :-)
I was there at the same time (to watch the game). Our booth sat 5 people pretty comfortably. The service was excellent. Not a lot of food choices for vegetarians. I too was served the Maharajah in the tulip glass. I don't know what was up with their big projector setup - it seemed to only be hitting about 15 FPS. The other TVs were beautiful though. We had a great time and will certainly go back, probably after they start taking reservations again (I'm not exactly known for my patience).

Ha, true! And you're right, that big projector was annoying, almost made you motion sick to watch...but all those other TVs in there, glorious HD heaven!
Scottish ales, barleywines, Belgian ales and other aromatic beers
Wiki lists those are proper beers for tulip glasses...I guess the chocolate stout might be considered aromatic?

Well, I’m asking about it over on Beeradvocate.com in the Republic thread and being told that it is an ‘acceptable’ glass to serve it in. Chase, from COOP, seems to have info that the brewer recommends a pint glass for that specific beer…… and I see at least one other BA that I recognize as being fairly knowledgeable about beer commenting that it’s his opinion that IPAs and stouts should be served in pint glasses and I have to agree.
Save the tulips for Belgians and barley wines as far as I’m concerned……

I apologize for the projector problems. The main receiver was bad, we are waiting on a new one. This is our main receiver; it controls the bathrooms and vestibule as well. We should be ready to go by this wekend...thanks for all of the comments!

No need to apologize, Tuck!
Actually, maybe an apology for all the success you're apparently having! I want it to be easier to get a table. :D
JPatrick 04-09-2010, 08:24 PM I have been to Republic twice and the first time was very nice. My son and I sat at the bar and all was incredible except for the trendy bartender (Shannon?) with the goatee who made us feel like we needed to apologize to him for having to wait on us. The food was excellent, the beer was very fresh and cold, but hire Hailey from the Drunken to see how a bartender should handle their customers. The second time I went was on a Tuesday night with my wife. All the tables were full, but there was no one standing. The very personable and polite hostess said it would be a 45 minute wait. We opted not to stay and my wife commented "they did not want us there". I told her that was not the case, but maybe the hostess could say "We have several people waiting at the bar, could we get you a drink while you wait?" Jus saying.
Fastfwd 04-10-2010, 08:37 AM LOL, I ripped on Shannon over on the Beeradvocate.com site too - resulting in a 180 of attitude from him on subsequent visits, but I can relate.
Hailey is really something, huh? It's like she has a genuine concern for her customers. I like her!

I have no idea about her technical drink-making skill and knowledge, but she's the best bartender in OKC, for my money.
